CHERRY CAKE

Dough

  • 150g wheat flour

  • 2 teaspoons baking powder

  • 50g sugar

  • 1 sachet vanilla sugar

  • 1 egg

  • 75g soft butter

Filling

  • 1 jar of sour cherries in a glass

  • 25g sugar

  • 30g starch

  1. Knead all the ingredients for the dough and place in the fridge for 30 minutes

  2. Drain the sour cherries on a sieve.

  3. Pour the juice in a saucepan. While still cold, stir in the sugar and starch and then bring to the boil.

  4. Now add the cherries to the liquid and simmer until it becomes a solid mass.

  5. Press about 3/4 of the dough into the cake tin.

  6. Pour the cherry mixture onto the dough and smooth it down.

  7. Lay small, flat crumbles on the mixture.

  8. Bake the cake at 180°C /350°F for 20-25 minutes until it is golden brown

  9. Let it cool down and sprinkle with icing sugar as you like
