DATE CASHEW

BREAD

  • ¾ cups whole dates

  • 1 whole grain flour

  • 1 tablespoon baking powder

  • 1 tablespoon cinnamon

  • pinch of salt

  • ¾ cup vegetable oil (I used sunflower oil)

  • ½ cup brown sugar

  • ¼ cup honey

  • 2 large eggs

  • 1 tablespon vanilla

  • ½ cup chopped cashews

  • Milk (I used soya milk)

  1. Preheat the oven to 160°C / 325°F.

  2. Place the dates into a bowl and cover them with very hot water. Let the dates soak while preparing the cake dough.

  3. In a large mixing bowl, whisk together vegetable oil and brown sugar first. Then add honey, eggs, and vanilla.

  4. In another mixing bowl, sift together flour, baking powder, cinnamon and salt.

  5. Pour the flour mixture into the wet ingredients and stir everything.

  6. Drain water from the dates and chop into small chunks.

  7. Fold the cashews and date chunks into the dough.

  8. If the dough is too thick add milk until it gets a smooth mixture.

  9. Generously grease your loaf pan with cooking spray. Pour the dough into loaf pan.

  10. Place loaf pan in preheated oven. Bake the cake for about 1 hour, or until a toothpick inserted in the center comes out clean.

  11. Remove from oven and let it cool down.
